A creamy, full-bodied spread that's a satisfying substitute for liver pate. It does not, however, have a mock meat flavour.
Measure cashews into blender. Pulse blender to grind cashews.
Heat oil in saucepan. Cook onions and garlic until transparent. Stir in tomato paste.
Combine remaining ingredients in blender and process to blend.
Add tomato mixture and process until smooth.
Transfer pate to a container with a tight lid. Refridgerate 2 hours.
Serve with crackers, bread, party-size pitas or leftover crisps.
