Description

A hearty salad with all the nutrients to stand alone as a meal.

Ingredients

  • 2 T olive oil
  • lemon juice (fresh)
  • 1 c cottage cheese
  • black or cayenne pepper
  • spike or salt
  • 8 broccoli flowerettes
  • 1 cn chick peas (19 oz)
  • garlic (crushed)
  • 1⁄2 cucumber, english
  • 2 celery stalks, large

Instructions

Supplies: 
chopping board
sharp knife
large bowl
serving spoon
measuring spoons
measuring cup
Method: 

Chop all the vegetables into bit-sized pieces and combine. 

Drain and rinse chick peas.  Add to salad.

Measure cottage cheese and olive oil. Add to salad. Toss salad with spoon to mix. Squeeze lemon juice over salad. Sprinkle on garlic seasoning, pepper, Spike / salt to taste. Toss to mix.

Serve with crusty bread or leftover crisps
