Mock gingerbread houses – Not in flavour, but in fun-to-decorate & eat:)
Prepare for construction by breaking the crackers into half pieces, at their perforations.
To prepare the 'snow' icing, place the egg whites, icing sugar and cream of tartar in the bowl; blend on low speed until mixed. Beat at high speed until soft peaks form, 8-10 minutes.
Prepare 1 piping cone for each participant by forming a sheet of paper into a cone. Secure together with clear tape. Reinforce the tip, by wrapping it with tape to prevent collapse while piping. Cone-point opening should allow for a 1/4" icing line. Trim if necessary.
Lay a sheet of waxed paper to work on. Spoon some snow into each cone. Fold the large open end of the cone over and push the snow toward the tip. Assemble each house by piping snow onto the edge of one cracker and attaching it to another cracker at a right angle. Hold the 2 crackers together until stable enough to stand, about 2 minutes. Complete the main structure with 2 more crackers. Repeat for the remaining 5 houses. Attach the roofs to the houses by piping snow on the top edge of 2 opposing walls. Set 2 crackers on top of the walls at an angle, making a peaked roof. Pipe snow on the roof joint, sealing it together. Dry 1 hour.
With the remaining icing, decorate the houses and complete by sticking assorted candies into the wet snow. Dry 2 hours.
