and … delicious! Doubles, triples and freezes easily.
Ingredients
1 3⁄4
c
flour, combo – never-bleached & whole wheat
2
tsp
baking powder
1⁄4
tsp
baking soda
1⁄2
t
salt
1
pn
nutmeg
1⁄3
c
butter, room temperature
3⁄4
c
sugar, granulated
2
eggs
1
c
banana, over-ripe, mashed
1
c
blueberries, fresh or frozen
Instructions
Supplies:
wet & dry measuring cups
measuring spoons
2 x medium bowls
small bowl
sifter
hand mixer
loaf pan
seive
Method:
Preheat oven to 350 F
Measure flour (reserve 3 TBSPS to coat blueberries), baking powder. baking soda, salt and nutmeg together in a bowl. Sift all together.
Cream butter with sugar until light and fluffy.
Beat in eggs, one at a time.
Add flour mixture and mashed banana alternately into egg mixture
Coat blueberries with reserved flour
Carefully fold berries into flour mixture.
Spoon batter into a well-greased loaf pan.
Bake 50 - 60 minutes or until done. Test middle at 45 minutes.
