Ingredients

  • 1 3⁄4 c flour, combo – never-bleached & whole wheat
  • 2 tsp baking powder
  • 1⁄4 tsp baking soda
  • 1⁄2 t salt
  • 1 pn nutmeg
  • 1⁄3 c butter, room temperature
  • 3⁄4 c sugar, granulated
  • 2 eggs
  • 1 c banana, over-ripe, mashed
  • 1 c blueberries, fresh or frozen

Method: 
  1. Preheat oven to 350 F
  2. Measure flour (reserve 3 TBSPS to coat blueberries), baking powder. baking soda, salt and nutmeg together in a bowl. Sift all together.
  3. Cream butter with sugar until light and fluffy. 
  4. Beat in eggs, one at a time.  
  5. Add flour mixture and mashed banana alternately into egg mixture
  6. Coat blueberries with reserved flour
  7. Carefully fold berries into flour mixture.
  8. Spoon batter into a well-greased loaf pan.
  9. Bake 50 - 60 minutes or until done.  Test middle at 45 minutes.
