Description

A creamy, full-bodied spread that's a satisfying substitute for liver pate. It does not, however, have a mock meat flavour.

Ingredients

  • 2 T corn or safflower oil
  • 1⁄2 c chopped onions
  • 2 clv minced garlic cloves
  • 2 T tomato paste
  • 1 c ground cashews
  • 1 c ricotta cheese
  • 2 T parsley
  • 1 T dry mustard
  • 1⁄4 c lemon juice
  • 2 T brandy
  • 1⁄4 t hot sauce

Instructions

Supplies:

small frying pan

wet & dry measuring cups

Method: 

Heat oil and cook onions and garlic until transparent. Stir in tomato paste. In blender, combine remaining ingredients. Add tomato mixture and pulse-process until smooth. Transfer into container with lid. Refrigerate for 1-2 hours. 


Serve with crackers, bagel crisps, or appetizer pitas.
